We make Bread as it should be; simple, wholesome, delicious, organic, 100% Sourdough Bread with only 4 base ingredients; Flour, Water, Sourdough Starter, Salt (plus Jalapeño & Cheddar for our speciality bread).
Sourdough, is one of the oldest forms of bread, with a lot of health benefits:
Supports a healthy gut microbiome. Sourdough bread contains more beneficial nutrients than other types of bread due to the fermentation process. Fermentation creates probiotics, or healthy bacteria, that can aid in digestion. Sourdough is a good source of prebiotics and fiber, which is the substance that feeds the good bacteria in your gut. Choosing a whole wheat version has more fiber and will further increase the benefits to your gut.
Easily digested. Sourdough fermentation decreases the amount of gluten and FODMAP carbohydrates in the bread. This makes digestion easier and has proven beneficial for those with digestive disorders such as irritable bowel syndrome.
Supports better blood sugar control. Sourdough bread has a lower glycemic index than white bread, so it doesn't increase blood sugar levels as quickly. This is true because the fermentation process makes starch in the bread less available for digestion and absorption into the bloodstream.
For all of our breads we use organic ingredients and a long pre-ferment, thus our breads develop a greater depth of flavor and are easier for the body to digest. And to add variety to life, we maintain four different species of sourdough, offering breads with slightly different taste.
- San Francisco “Fisherman’s Wharf” sourdough is one of the most famous sourdoughs in the world because of its coveted crust and distinct sour flavor. San Francisco starter contains the yeast Torulopsis Holmii and the bacteria Lactobacillus sanfrancisco.
- French Parisian sourdough starter is a true gem for any baker. Its mild yet distinct tartness, coupled with a delightful sweet finish, not only ensures a perfect baguette but also guarantees a truly delicious outcome that will tantalize your taste buds.
- German Sourdough carries the traditions of bread-making from the heartland of Germany. This sourdough culture holds immense cultural significance, embodying the craftsmanship and community that thrived during the early modern period. This starter offers a distinct sourness that is balanced by its hearty and robust flavor.
- Anglo-Saxon is a 900 yr old starter with familial ties from Wales and a has a history that dates back to the Silk Road Trades era. Its flavor profile is similar to that of the German strain, just a bit stronger.
Pro-Tip!
Real Sourdough, like ours, is the only bread that freezes well. Whether you slice it, or leave it half or whole, wrap it in freezer paper (no plastic or aluminum!) and secure with a few pieces of freezer tape. It says good for several months. To de-frost, simply take it out of the freezer and put it in the fridge overnight. It will be as fresh as the day you froze it.
